Otello most recently ran a popular pop-up restaurant in Serendipity West in Glasgow’s Great Western Road but became famous online with his Inverness-based food truck Tagliotello.
Now he will run Il Pastaio with a new look and menu at the St Vincent Street venue which opens later today.
Its new menu will feature a selection of authentic fresh pasta, antipasto and desserts, with highlights including Tuscan fiesolana, genovese from Naples, Sardinian style mussels, and agilo e olio.

The restaurant will also be creating weekly specials, have gluten free and vegan options, as well as a luxurious cocktail menu including Classic Negroni, Limoncello Spritz and Amaretto Sour.
He said: “This opportunity to head up Il Pastaio and run my menu is wildly exciting. I’m going to pour everything I’ve learned during 15 years in hospitality and customer service with a team who I know are as enthusiastic as I am to do something great.

“I’ve worked in hospitality since I was 14, but I officially became a chef when I launched Tagliotello in 2021. I thought the best way for me to be successful was to pick one food and do the best I could with it, and I picked the food I love the most – pasta.”
As part of the reopening, the restaurant will be offering pasta for just £5 next Tuesday, 14 January.
