Inverness’s Ness Walk hotel set to delight diners with gourmet tasting experiences celebrating seasonal cuisine and the local Highland larder

An exciting new tasting experience is set to tantalise diners’ taste buds in Inverness.

From later this month through until March, the Torrish restaurant in Ness Walk will be offering two new “exquisite” tasting menus celebrating seasonality and the finest local larder.

Bookings for the delectable meals are already open.

And the team at the five-star hotel’s much-loved restaurant are excited to share with diners the menus that top chef Gerard Chouet has curated for them.

Ness Walk’s Angus Macleod said: “We’re delighted to be taking Torrish in a new direction to mark the new year. From January through until March the team will be offering a new tasting menu experience that celebrates both seasonality and the local larder.

“Drawing on Chef Gerard Chouet’s heritage, originally from Burgundy, each menu pairs locally sourced ingredients with European flair. Having relocated to the Scottish Highlands in 2023, Chouet’s culinary expertise extends beyond the kitchen; as an avid wild forager, his dishes are infused with and inspired by the finest local produce.

“To offer an exciting variety for guests dining at Torrish for special occasions in early spring, Gerard has curated two exquisite menus. Two tasting menus will alternate weekly, each offering a unique perspective and featuring the finest plant, meat, and seafood from the region.

“The first of these new tasting menus will be embracing Scotland’s larder with Orkney scallops, heritage carrots and venison while the Gruyère gougère, nduja & Minger ravioli, and tandoori-spiced monkfish reflect diverse European and international influences.

“Flavours of buttered parsnip, truffle velouté, and elderberry ketchup are undeniably wintery as the menu progresses through from light savoury starters through rich main courses to a sophisticated close.

“The second menu nods to classical French techniques with refined and creative pairings such as beetroot meringue with goat cheese chantilly and juniper ash with pheasant terrine. Each course on this tasting experience delves into seasonal depth, incorporating comforting warmth and rich texture.

“Alongside the menus, a vegan tasting menu will also be on offer – an inventive exploration of plant-based cuisine, blending global influences with seasonal and local ingredients for a vibrant, texturally rich experience.

“Appreciating that fine dining deserves exquisite paired drinks, the team are diving into their collection of over 110 fine wines to create a wine pairing for each menu which will be available in addition to the menu.”

The Torrish tasting menu will be available daily from 6pm and open to residents & non-residents for reservations from Friday, January 24. For guests wishing to opt for a more informal dining experience, a lounge menu will also be on offer.
